Vanilla Extract (and more uses for vodka)

Most people know I'm not a drinker. I don't like the taste of it (unless it's a bit of wine in a sauce) so seeing me buying booze in a liquor store is pretty funny. Especially when it's first thing in the morning and I'm going for the biggest, cheapest jug o' VODKA.  The clerk always gives me a winky look and I roll my eyes. No, I'm not in crisis, no, I'm not having a party. I'm making CLEANING SUPPLIES and Vanilla Extract, buster. Legit.

Homemade Vanilla Extract:

Go to Amazon and buy 8 (or so) nice vanilla beans. Or to your personal vanilla bean supplier, whatever's cheapest.  I used Madagascar.
Pour 8oz of cheap vodka in a mason jar.
Split open the beans with a sharp knife and dump them in the jar (told you it was easy)
Slap on the lid and stick it in a dark cupboard for a month or so, giving it a little shake every so often.

It will be nicely flavored in a month, but will only get better with time. Go ahead, get a couple of jars going for the holiday baking season!


Cleaning stuff:

Wrinkle release/fabric refresher spray:
1/4 cup vodka
1/4 cup liquid fabric softener
water

Mix vodka/softener in spray bottle (32 oz-ish) and top with water. Shake to mix. spritz on clothes to release wrinkles and freshen before wearing.


Cleaning spray:

1/4 cup vodka
1 Tablespoon dish soap
water

Mix in a spray bottle and clean away!


Vodka is also a good neutral alcohol for deodorizing, so spritz it neat on stinky stuff.

Pumpkin-Apple Spice Baked Doughnuts

Pumpkins make me happy. On my June wedding day, my new father-in-law told me we had to go to the field behind our house to see his gift to me...he had planted a pumpkin patch in the Spring because he knew how much I loved to cook with pumpkin. So, here is the first recipe from Gray Gables Goodies: PUMPKIN-APPLE SPICE BAKED DOUGHNUTS 1/2 + 1/3 C pumpkin puree (not pie filling, approx 1/2 of a small can) 1/4 C brown sugar 1/4 C frozen apple juice concentrate (thawed) 1/4 C + 2T milk 2 T unsalted butter, melted 2 T Nutiva Red Palm Shortening 1 t cider vinegar 1/2 t vanilla 1 T cinnamon 1 t ginger powder 1/4 t cloves 1/4 t nutmeg 1/2 t salt 1 1/2 cups spelt flour (Great River Organic is my favorite) 1/2 t baking soda 1 1/2 t baking powder Preheat oven to 350. Four Sanaa Chutneys

If you've ever had the bread service from Sanaa at Disney's Animal Kingdom Lodge Kidani Village, you know how delicious it is, but did you know, you can make it at home? You can now!  I had the privilege to be a Duty Manager at DAKL (as it's affectionately known) and while I was there, the chefs graciously shared some of their recipes with me.  I only have 4 from the original bread service to share, but it's a start.  Tamarind Chutney: 1 Tablespoon canola oil 1 teaspoon ground cumin 1 teaspoon ground ginger 1/2 teaspoon garlic powder 1/2 teaspoon ground fennel 1/2 teaspoon garam masala 1/2 teaspoon dried hibiscus flowers (you can use hibiscus tea) 2 cups water 1 1/4 cups brown sugar 3 Tablespoons tamarind paste (some bougie stores carry this, or Amazon) 1/2 cup soy sauce Heat the oil in a saucepan over medium heat.
