Princess Leia Chocolate Rolls


 May the Fourth be With You (uhhhh, the what???)

Most people who know me know I am a more Star Who? than Star Wars fan. I'm still trying to sort out how Indiana Jones is in a space movie.  That said, in my new job, I am having to be assimilated (see what I did there?) to the Star Wars culture as the force is strong in my building.  In preparation for a Star Wars-themed potluck, I stumbled across a recipe that checks all of my boxes for one of these shindigs: chocolate, Nutella, and perfectly themed.  Meet the Princess Leia BUN:

1 1/2 cups whole milk, warmed to 95-100 F

Mix:
3 cups spelt flour (or AP, your choice, I liked the texture spelt gave me)
1/2 cup dark cocoa powder (for the dark side...)
1/4 cup sugar (for the light side...)
1 teaspoon cinnamon (for the sass...)
1 teaspoon salt (well, you know)
1 packet instant yeast

Add the warm milk to the dry mixture with a dough hook and let it do its thing while you crack open a small jar of NUTELLA.  Butter a 9x9 baking dish and preheat the oven to 350.

Once the dough is a smooth ball, set it on top of the warm oven to rise for about an hour or so.

Prepare a work space with a sheet of parchment paper, a rolling pin, a length of dental floss, and a couple of non-latex gloves.  Believe me, you want the gloves.  Punch down the dough and roll it out into a long, narrow rectangle (about like thick crust pizza). Spread about 2/3 of the jar of Nutella, leaving 1/2" around the edges bare.  Carefully roll the long side to make a chocolate snake, pinching the edge closed.  Work the dental floss under the roll, wrap it around, crossing the ends (not tying, just crossing), and pull to cut a roll about 1 1/2" long. Carefully place the roll in the baking pan. Continue cutting with the floss and nestling the rolls together, just touching.  I get about 4x4 in my square pan.  Set the rolls to rise again for another 45 minutes.  Bake for 18 minutes and cool in the pan.

For the frosting:
Mix 1 cup powdered sugar
1/4 cup dark cocoa
3 tablespoons of milk
Swirl in the remaining Nutella then spread over the rolls.

As dorky as they looked on the side of Leia's head, they sure are delicious to eat!

Pumpkin-Apple Spice Baked Doughnuts

Pumpkins make me happy. On my June wedding day, my new father-in-law told me we had to go to the field behind our house to see his gift to me...he had planted a pumpkin patch in the Spring because he knew how much I loved to cook with pumpkin. So, here is the first recipe from Gray Gables Goodies: PUMPKIN-APPLE SPICE BAKED DOUGHNUTS 1/2 + 1/3 C pumpkin puree (not pie filling, approx 1/2 of a small can) 1/4 C brown sugar 1/4 C frozen apple juice concentrate (thawed) 1/4 C + 2T milk 2 T unsalted butter, melted 2 T Nutiva Red Palm Shortening 1 t cider vinegar 1/2 t vanilla 1 T cinnamon 1 t ginger powder 1/4 t cloves 1/4 t nutmeg 1/2 t salt 1 1/2 cups spelt flour (Great River Organic is my favorite) 1/2 t baking soda 1 1/2 t baking powder Preheat oven to 350. Four Sanaa Chutneys

If you've ever had the bread service from Sanaa at Disney's Animal Kingdom Lodge Kidani Village, you know how delicious it is, but did you know, you can make it at home? You can now!  I had the privilege to be a Duty Manager at DAKL (as it's affectionately known) and while I was there, the chefs graciously shared some of their recipes with me.  I only have 4 from the original bread service to share, but it's a start.  Tamarind Chutney: 1 Tablespoon canola oil 1 teaspoon ground cumin 1 teaspoon ground ginger 1/2 teaspoon garlic powder 1/2 teaspoon ground fennel 1/2 teaspoon garam masala 1/2 teaspoon dried hibiscus flowers (you can use hibiscus tea) 2 cups water 1 1/4 cups brown sugar 3 Tablespoons tamarind paste (some bougie stores carry this, or Amazon) 1/2 cup soy sauce Heat the oil in a saucepan over medium heat.
